There are some processes that cannot be undone yet.
Undo does not affect filters, for example.
It is pending to be implemented according to the roadmap.

Open the History panel to see what will be undone regarding the playlist and timeline. Sometimes a widget (field) has focus and has its own keyboard handler that handles undo (basically anything you can type into). In that case you can press Shift+Esc to make the player grab focus, which makes Shotcut global keyboard input handler respond.
It didn’t work out, but there’s no need to worry. I will use the mouse to undo.
