How can doing
Make a transparent clip. Use Open Other > Color transparent.
Drop it on the timeline. Add a Gradient filter. Set up the colors, offset, position and size.
Add Text simple.

Add Size and Position filter if you do not want full screen. You can then animate the combination using Keyframes.
