can I set predefined text formats, or do I have to reformat each text input (type, size, color, background…) Windows 10, 64 bit

Like for any other filters in Shotcut, you can create your own custom presets for the Text: Simple filter.
Set all your text parameters, then click the PLUS button next to the Preset menu. Give a name to your new preset and click OK. The new preset will be added to the existing presets list.
Presets works also with Text: Rich, but it will not save what’s in text area (Actual text, colors, fonts etc…)
