I am no longer able to have audio & video tracks over each other. Adding an audio track ‘pushes’ the video outside the time frame.

You have Ripple all tracks enabled, buttons on the top side of timeline window, click on it to deactivate the feature (all 3 circled buttons do different ripple things).
