I want to add a video track [Track operations-add video track] below the existing one, if i add one it all comes above it. How?

Insert and then move it

In the same right click menu (while right clicking the desired track) you do have the option to move 1 track below or above.
I am not sure how you missed it despite it being right in the menu where you went to add the track?
Btw, just press alt+shift+down its way faster than mouse.
