Zooming in on still photo

I’ve tried using keyframes and size and position to zoom in on a still photo. It works fine except at the end of the clip the original photo appears in its original size and shows black vertical margins at both the right and left sides.

I would like to know if this is the best way to zoom in on a still photo, and if there is a way to eliminate reverting back to the original photo and those black margins.

My second question is when editing text, what is the tool one should use to add a color border to say a white font, to make it more legible?

The zoom should stay at the final level at the end of the clip.
The screenshot shows a zoom that starts at 0 then goes to 2X and stays at that level.

You can also use the Rotate and Scale filter to zoom.

You can set an outline for the text.
