OK so I open the rich text tool, set the font and the size to what i want, and low and behold as soon as I start to type it reverts back to the default size and font, the only way forwards is to select the text i have made and then select the size and the font again. Also saving a filter seems easy, but how to re apply it remains a mystery to me.

Change your approach:
Type some of your text.
Use Ctrl+A to select everything.
Change the size, the color, the font etc…
Type the rest of your text.

That is my approach now, but I would like to have a default to a particular font, surely there is a way to do that?

Save your preset (font, size, color, …) as a filter set. This is the icon under the filter area:
You can then select this preset using the “Set” tab in the filter panel:
