Overlapping two Clips on the same Track creates a Transition between both.
But unfortunately this seems to be a later non reversible effect, if you need to edit something.
Am I missing something here?

No, You aren’t missing anything, I would say it’s semi-irreversible because you can undo the transition by CTRL+Z, but if you have to many steps than you might to reverse all the changes and do them again.
You could create an extra track with the duplicate of the clips with it’s little duration, or you can directly use a transparent background from the others menu.
If you change your mind, you can always delete the transition and drag the part of the original video back. Any part of the clip that was deleted can always be brought back by clicking and dragging the edge of the clip, so everything is reversible.
